1. Dry Brined, Miso, Maple, and Butter basted Roast Chicken

A big plump dry brined and basted chicken. Easy to source, cheap to buy, and easy to cook. Brining seasons up all of the meat, even on the inside, and dries up the skin so you will end up with a gorgeously sticky flavourful roast. Find the recipe on the link above.
2. Grilled Zucchini, Halloumi Salad with Mint Dijon and Lemon

If you like to BBQ this could be the salad for you.
You can cook it on a BBQ at home, or at the park. Take all components (including the dressing in a jar) and toss it together straight from the grill while hot. Cook it in a grill pan or skillet at home, it doesn’t matter where you cook it, please give it a try. Zucchinis and halloumi are perfect partners and lemon and mint are the music they hum to. I have added sweet little peas to the mix to add green and pop. Could this be the ultimate good-time salad? 3. Spice Roasted Cauliflower, Carrot and Olive Salad

This is a real beauty. It has all the elements of a Moroccan Tagine. One of my personal favourite vegetables is Roasted Cauliflower but did you know roasted olives are very good in a salad such as this? Little baby carrots and cauliflower almost embrace those olives like a long lost relative at Christmas.
Now just imagine roasted pistachios for crunch and a little honey to cosy up to the cumin and coriander spice. It is a salad you will want on repeat. You can get the recipe here.
4. Make ahead Creamy Mashed Potato with Bacon and Cheese

Best idea ever. This make-ahead mash potato will rock your new make-ahead world!
It’s crashing the party with creamy soft potato flavour. There is no stringy cheese, this is serious potato with the addition of Parmesan and bacon. Nothing detracts from the creamy velvety texture of this potato. Make ahead means you can make this anytime for meal prep days and easy entertaining.
Include vegetarian friends by omitting the bacon. Sprinkle with chives when it comes out of the oven. Chives are an underused herb that can transform food with the gentlest of onion flavours. RECIPE HERE

This is the quickest way to make a whole slab of fruit mince tarts. If you love the as I do, this is the quickest way to making them. Just like a fruit mince tart but with a crunchy crumble topping. East it warm with ice cream or just have a slice with a ciup of tea. You will not stop eating this until it is gone. I promise

2. Christmas Gingerbread Cake with Lemon and Caramel
Traditional style layer cakes can be fun at Christmas. Yes, this is a little bit more work but highly worthwhile. Soft delicious gingercake with a creamy buttercream that can be made a couple of days ahead. Just look at those cut Christmas trees. You’ll never guess how they are made.

3. Brownie Ice Cream Layer Cake
This ultra impressive Frozen Chocolate Cheesecake dessert could be the one. Add berries and extra chocolate and you have a party. This is also gluten-free and an amazing make-ahead dessert

4. Gluten Free (Pastry) Tart with Ricotta and Strawberries
What about this summery tart you can make ahead. Just add the delicious strawberries and syrup when you are ready. You could even make your own ricotta! The pastry is gluten free and you would never know.
