This is the baking for you if you left it to the last minute. Christmas Slice fast, no commitments necessary!
Christmas apparently is not the time to start new things. It’s not time to commit to anything new or start any thing that needs change. Everyone is just trying to get to the end of the year in one piece. That’s what I have been told anyway. A lot of the last few weeks is clearly spent wondering what can be done about Christmas, the food, the relatives and the actual day. And before we all know it, Christmas day is here.
I guess it’s just easier for everyone if there is a beginning date to start things each year. That would probably be the first of January. I believe this is true because each year on my birthday, everyone seems to be either giving up drinking or starting on a new plan of some kind, like giving up food or not spending money or some such thing. No one seems to start this kind of plan before Jesus’s birthday do they now?. No they always begin on mine!.
So this year I am going to help you get to Christmas day in one piece with a few last minute no commitment type things to cook. These are for you if you are busy working or just busy in general. This slice, nee cake is the first of those things.
Here’s the ultimate No Commitment Christmas Slice ( or thin cake), just in case you dont want to start anything that takes a long time right now. This doesn’t take long to bake, it can be decorated with what ever you like and you can eat it straight away. there are no commitments here.
- 500 gm mixed fruit ( sultanas, raisins, cranberries etc)
- 150 gm macadamias ( or hazelnuts or almonds )
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 teaspoon allspice
- 250 gm SR flour (or plain with 4 teaspoons of Baking powder)
- 1 lemon zested and juiced
- 1 teaspoon vanilla extract
- 2 eggs large
- 200 gm butter
- 250 gm brown sugar
- 250 gm glace fruit (large pieces)
- 6 macadamias
- ½ cup strawberry or apricot conserve melted
- Melt the butter and sugar. Adding the spices.
- Put the fruit, eggs, flour, zest and juice, eggs and cooled butter mixture into a stand mixer (or a large bowl) . Mix all together well to combined.
- Pour into the well lined tray and bake for 1 hour - 10 minutes, covering with foil if it starts to get too dark. If it gets too dark it will dry out.
- Cool the cake.
- Decorate by painting with conserve (jam) and then pressing the glace fruit onto the top.
