These are the cutest little brownies you could have at Christmas, don’t you think?. Melted Snowman Brownies are the perfect Christmas fun!
These Melted Snowmen Brownies are cute aren’t they?
We never really had any Christmas traditions in our house growing up. Mum and Dad both worked and Christmas usually involved a fruit salad and ice cream or Pavlova cobbled together after a late night on Christmas eve. My mother hated cooking and by the time she filled 4 Santa stockings for my sisters and I and tucked herself into bed on Christmas eve at 2 am, the last thing she wanted to do was bake.
My Aunty was the only one who ever baked. The usual suspects, caramel slices, tiny fruit mince tarts and Christmas cake, every year. She brought these to our house wrapped in red or green cellophane on a Christmas plate along with Christmas decorations for the table. Without her there would have been no tradition.
I am still not good at tradition either. I like to bake whatever takes my fancy. I made these because Skater, my son, loves brownies. He hates Christmas baking. Lots of people dont like fruit mince tarts, although I just can’t imagine why not and I can’t promise not to make them before Christmas.
Melted Snowman Brownies
Ingredients
175 gm butter chopped unsalted
- 175 gm chocolate dark chopped ( I use anything over 63%)
- 250 gm caster sugar 1 1/4 cups
- 3 eggs large
- 100 gm almond meal 1 cup
- 50 gm cocoa dutch (1/2 cup)
Melted Snow Decorations
- 50 gm white marshmallows
- 20 ml cream 1 Tablespoon
- 50 gm Orange icing or lollies for decorating
- 1 small liquorice small bag soft
- 8 extra marshmallows for resting the hats on
Instructions
- Set the oven to 170C (340F). Cup cake papers or a smallish muffin tin ( lined or greased)
Choose a tin that is not too deep to bake the snowmen in.
- Put the butter and chocolate into a bowl and melt in a micro wave or double boiler till soft. stir to melt
- Beat sugar and eggs till light and fluffy and white. Add the cooled chocolate mixture into the eggs with the almond and cocoa and mix well to combine. Spoon the mixture into the papers or muffin tins. bake 15-20 minutes or till just firm to touch.
To make the Marshmallow snow man
- Put the marshmallows into a jug or bowl with the cream. Blitz for 30 seconds in a micro wave and then stir to combine. Cool slightly. Spoon about 1/2 teaspoon onto each brownie. Cool
- Meanwhile make tiny balls for the eyes with the liquorice and the tiny hats with this liquorice as well. Make the little carrot shaped orange noses with slices of orange lollies rolled into little carrots. Rest each piece of liquorice hat on a half a marshmallow. Let these dry out before storing in an airtight container till needed. They will last for about 4-5 days . You can keep in the fridge in a warm climate, then bring to room temperature
