A cheesecake or tower, entirely made from Australian and imported cheeses is a great alternative to a traditional cake. A Cheesecake is ideal for just about any celebration, birthday, conference or shower but particularly weddings.

Things you need to think about
- You need at least 3 layers no matter what the size, so that it will look like a traditional tiered wedding cake. The number of layers that you can have will depend on the cheeses available. There are only a limited number of diameter sizes, but you can generally work around this with a large tower.
- The cheeses should work together to create a balance of flavours and styles, just like you would do with a cheese plate. For example a hard, a soft and a blue
- The cheeses must each be firm enough to be stacked. As cheese sits, it becomes softer and this can sometimes be cured with clever stacking.
- The decoration of your cake is very important. Introducing fruits such as figs or grapes and adding complementary flowers or greenery and caketoppers such as figurines or ribbon can really make the “cake” look spectacular
We can help with that
A cheesecake is not easy to make if you don’t have access to good quality artisan cheeses. Once you decide how big your celebration will be . We can help you source cheeses with the right diameter, weight, depth and even colour . There is an art to stacking and balancing the cheeses to make sure that your cake doesn’t collapse.
We can source and supply biscuits, artisan breads dried & fresh fruits and special condiments to serve with your cheese. Your cheese will be stunning cut and served as a cheese plate or platter as dessert or as a cheese course with coffee.
Tastings
If you are unsure we are happy to help. If you need a tasting or information on your cheese we can provide notes and a list of cheese mongers who sell the cheeses you have chosen so that you can go and taste.
Ordering
It is best for you to give us as much notice as possible, and preferably at least a month. We can still arrange a beautiful cake with less time, but it’s easier to source the right cheeses with a little more time .
Once we have helped you decide on the look and size of your cake, we will send you an order form to sign and send back. A deposit of 20% will be required with final payment 1 week prior to the event.
Pricing
Cheeses are priced according to weight. A 7 kg round of cheese is often 7.2 kg or 6.85 kg, therefore making the pricing just a bit approximate at first. The prices are subject to change if the cheese you have chosen is unavailable or a new shipment arrives with adjusted pricing, this is a very distinct possibility as cheese is seasonal and also subject to sales fluctuation. That said we will make every effort to make sure your cheese arrives as per your order and we will always contact you with updates. You will find our prices will be much more competitive than ordering from a cheese retailer (shop)
How much cheese will I need?
The size of the cheesecake you want depends entirely on you. You can have a large tower for a small amount of people if you would like to make a statement or match the tower to the number. We work to a formula that will approximate the cheese you will need for your cake. Cheese can be cut and still saved for use on another day or it can also be packaged into take away boxes for guests just like cake is.
Decoration
We can decorate or source special items for your cake. A special platter or cake plate, fruit and accompaniments, ribbon, flowers and cake toppers at a small extra cost. This will be dependant on just what you would like to do. Please ask for suggestions.
Cake delivery
Your cheese can be delivered to you in boxes that you can refrigerate. The delivery date is preferably up to 2 days before your event. Depending on the size of the cake most cheese can be stored in a home size fridge. If you would like your cheese delivered, set up and /or decorated at your event, please ask.
