Banana bread recipe. The toasting kind

This is a real banana bread. the kind you get in cafes toasted and smothered in butter

Ingredients
  

  • 125 gm butter softened
  • 180 gm brown sugar 1 cup
  • 80 gm golden syrup or honey | 1/4 cup
  • 420 gm bananas 4 large or 6 small | 2 cups
  • 2 eggs extra large, beaten
  • 260 gm flour plain, 1 3/4 cups
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon cinnamon optional
  • 2 tablespoons pepita seeds

Instructions
 

  • Set the oven to 160C. Line a loaf tine approx. 10 x 21 cm (4 x 9 in)
  • Mash the banana and measure out 420gm (2 cups). Set aside
  • Sift together the flour, baking powder, cinnamon and baking soda.
  • Cream the butter brown sugar and golden syrup till light and creamy. Add the eggs one at a time and mix. The mixture may look curdled between additions if so add a Tablespoon of the flour mixture.
  • Add the bananas to the egg mixture and add the flour and mix till only just combined.
  • Spoon into the loaf tin and bake for up to 60 minutes or until a skewer comes out clean

Notes

This loaf cooks on a low slow temperature.
Don't overmix the batter or it will become tough
I have been told by a reader that she substituted gluten free flour for the all purpose flour and the loaf baked up very successfully
