Set the oven to 170 C/ 340 F. You will need 12-14 muffin cups. I use large muffin-sized ones
Mix the oil, eggs, vanilla and apple puree together till well combined
Add the sifted flour, salt, baking soda and cinnamon.
Fill the papers almost to the top as the mixture doesn't rise very much.
Bake for 20 minutes or till firm when touched in the middle.
Cool completely and decorate how ever you like.
Follow the packet directions for the royal icing. This can be bought in supermarkets. Leave out a little of the liquid for the recipe and add some pink food colouring in is place if you are colouring it. Gel food colouring is the best but if you cant get a hold of that use liquid.
Spread the frosting over the cupcakes and decorate with pink silver and white pieces.
