Bubble and Squeak

Make this with fridge left overs or prepare some extra vegetables just for this delicious recipe

Ingredients
  

  • 1 kg potatoes peeled cut and steamed
  • 150 gm onion diced -1 large
  • 500 gm steamed vegetables chunky chopped ( this can be carrots sweet potato, swede, cabbage Brussels sprouts or anything)
  • 50 gm frozen spinach defrosted squeezed and chopped
  • 50 gm bacon chopped, 1 small rasher
  • 2 Tablespoons panko crumbs
  • 20 gm butter 1 tablespoon
  • 40 ml olive oil 2 Tablespoons
  • 1 teaspoon thyme leaves chopped
  • 1/2 teaspoon salt and a grind of fresh pepper
  • 30 gm sesame seeds optional / 1/2
  • 40 ml ml oil or butter Extra for frying

Instructions
 

  • Put the steamed potatoes, sweet potato ( or other vegetable) and spinach into a bowl and set aside.
  • Heat a nonstick fry pan on medium and then add the 30 gm of butter. Add the onion, thyme and bacon and cook on medium till nicely translucent and fragrant. Caramelise a little if you can because the sweetness from the onions will give lots of flavour.
  • Add the onion mixture to the potatoes and the Panko (or rice crumbs) and stir together well. You will need just enough crumbs to help the vegetables dry out and stick together.
  • Put the sesame seeds onto a large plate
  • Shape into patties with your hands. Lay each patty on a chopping board before pressing each one into the sesame seeds.
  • Fry the bubble and squeak patties in 20- 40 ml olive oil or butter till browned and heated through ( approximately 4-5 minutes each side.)

Notes

Depending on your vegetables you could add an egg to bind this mixture. If you are using up leftover roasted vegetables that are a bit drier than fresh steamed ones it maybe hard to get them to stick together and bind with out a small egg.
Roll a small amount of you mixture as described and try frying a test patty before adding the egg to see if yours will hold together well.
