Soda Scones. 5 minute Strawberry Jam

It's easy to make great scones you just need a light touch and some soda water! Under measure liquid rather than over measuring to avoid scones that are too soft. This recipe uses Australian metric cups

Ingredients
  

  • 400 gm plain flour 3 cups
  • 20 gm baking powder 4 teaspoons
  • 20 gm icing sugar 2 Tablespoons
  • 80 ml thickened cream or pouring cream ( 1/3 cup)
  • 200 ml soda water
  • 20 ml milk for glazing
  • 50 gm flour extra

Strawberry Chia jam

  • 250 gm strawberries de-stemmed and rough chopped frozen is fine just add a little less water
  • 30 ml maple syrup and up to 4 T if you like it sweeter
  • 50 ml water
  • 10 gm chia seeds

Instructions
 

Set the oven to 180 C/ 350 F. You'll need a lined baking tray. A 2 1/2- 3 cm cutter ( or a glass). A brush for glazing

  • Put the flour, baking powder and icing sugar into the food processor. Whizz to combine
  • Add the cream and the (SodaStream*) sparkling soda water
  • Mix till only just coming together. Turn out onto a bench.
  • sprinkle with just the smallest amount of extra flour and knead lightly. Flatten and cut.
  • Push the left over bits back together handling as little as possible and cut again.
  • Put them onto a tray and brush with a little milk. (This isn't absolutely necessary but it will make the tops a little golden).
  • Bake for approximately 12-15 minutes.

To make the jam

  • Put the strawberries, water and maple syrup into a bowl and microwave on high for 2 minutes or till soft and broken down. Stir in the chia seeds and press with a fork to break up the fruit.
  • Once chilled the jam will thicken up.

Notes

Dip the cutter into flour so it doesn't stick.
Don't over knead. The dough will only just be mixed together.
Just push the leftovers together gently before cutting again
Add less water rather than more to keep the dough from being sticky.
