Ingredients Method Notes

Ingredients

Makes 6 or 7 fritters
  • 300 gm tomatoes, chopped any kind
  • 2 pinches flaked sea salt or 1 teaspoon granulated salt
  • 100 gm spanish onion, finely chopped small
  • 1/2 bunch parsley, flat leaf 8 sprigs, leaves picked
  • 1/2 bunch dill 6 sprigs, leaves picked
  • 1/2 bunch mint, round picked 6 sprigs
  • 50 gm feta, firm Greek feta
  • 1/2 tsp oregano, dried
  • 75 gm flour, plain
  • 3 gm baking powder 1/2 tsp
  • 150 ml oil
  • 1 tsp pepper fresh ground

Method

  1. Chop tomato in rough fine pieces and sprinkle with salt ( approx 1/2 tsp). Let the tomato drain over a sieve for about 30 minutes or so.
  2. Pick the leaves and chop the herbs really fine. Chop the onion into fine dice. Use a medium to large bowl and add the chopped herbs, onion, oregano, baking powder, and flour. Add the well drained tomatoes and crumbled feta.
  3. Mix and squeeze all of the ingredients together and shape into 6 or 7 patties
  4. Heat a fry pan with a little oil drizzled into the bottom. Heat well before adding fritters so they sizzle. You may have to cook them in batches
  5. The fritters should be nicely golden brown. Put onto a serving plate and pile up. Make them smaller if you want them for nibbles or serve them with salad or even fried eggs!

Notes

Serve the fritters with whipped feta:
Soft Danish feta is best for this
100 gm feta
50 gm plain yoghurt. Combine and puree.
Add pepper or garlic as needed
