Soda Scones. 5 Minute Strawberry Chia Jam

Soda Scones you will love.

Scones. So simple yet so often a failure. These No Fail Soda Scones will be a keeper I promise.

I shared a recipe for an instant party last week. My Orange Vodka Soda Splash was made using my new SodaStream machine and these scones too are made with the lovely sparkling water I’ve now become accustomed to making at home. It’s always nice when a gift really does become a useful part of your kitchen. I set out to see if I could use it for more than just making drinks and I think this recipe kinda proves the theory.

Like pastry I think that scones are best made in the food processor where handling is kept to a minimum.

If you have no food processor then they can be made the old fashioned way with a bowl and your hands. I haven’t tested these yet with a more wholesome flour but it is on my list of things to do.

Scones have bitter sweet memories for me and it does involve a Grandmother, but a little indirectly. As a pre-teen I was encouraged to join Girl Guides. The aforementioned Grandmother was the “Captain” of the troupe, and insisted I join her on Saturdays. It wasn’t something I wanted to do, and in order to be free from the tiresome Saturday flag saluting, marching and pledging my virginity to the Lord, I had to complete a complex list of tasks. These tasks awarded badges to the lucky girls who pasted the rigorous testing. A completed list of badges would allow me to “finish”my  time. One of the tasks was to entertain a “tester”by cooking morning or afternoon tea and sitting down with the tester to enjoy it. I chose to make scones. I know you may be thinking that those scones were a failure because they weren’t. They were resoundingly good. (I made this recipe).

So why did I fail that badge?

After I made the tea and the scones I set them out on the table. I went to get the examiner and asked her if she would like some, and surprise surprise she said yes.

When she sat down she asked me to join her. I excused myself though saying I had to go. I didn’t want to drink tea with this lady I didn’t know and I was confident she would love the scones. To say she was very taken back was an understatement and I consequently failed my entertainers badge. It wasn’t because my scones were bad of course, it was because I was a shocking entertainer. Sitting and chatting would have been optimal. I did the badge again and drank tea with the lady.

These are not dry scones. They have a high moisture content that makes them fluffy and they will keep just a little longer without becoming hard as rocks. You can add fruit to them just after turning them onto the floured board if you like. Don’t over knead just sprinkle on a little flour and pat down. The sparkling water really makes them light. I also served my Soda Scones with 5 minute Strawberry Chia Jam that I have made before. You mus try it. I have included it in the video below.

Some grandmothers make scones a little differently to this but this method produces a light airy Soda Scone that everyone loves.

Soda Scones. 5 minute Strawberry Jam

It's easy to make great scones you just need a light touch and some soda water! Under measure liquid rather than over measuring to avoid scones that are too soft. This recipe uses Australian metric cups

Ingredients Method Notes

Ingredients
  

  • 400 gm plain flour 3 cups
  • 20 gm baking powder 4 teaspoons
  • 20 gm icing sugar 2 Tablespoons
  • 80 ml thickened cream or pouring cream ( 1/3 cup)
  • 200 ml soda water
  • 20 ml milk for glazing
  • 50 gm flour extra
Strawberry Chia jam
  • 250 gm strawberries de-stemmed and rough chopped frozen is fine just add a little less water
  • 30 ml maple syrup and up to 4 T if you like it sweeter
  • 50 ml water
  • 10 gm chia seeds

Method
 

Set the oven to 180 C/ 350 F. You'll need a lined baking tray. A 2 1/2- 3 cm cutter ( or a glass). A brush for glazing
  1. Put the flour, baking powder and icing sugar into the food processor. Whizz to combine
  2. Add the cream and the (SodaStream*) sparkling soda water
  3. Mix till only just coming together. Turn out onto a bench.
  4. sprinkle with just the smallest amount of extra flour and knead lightly. Flatten and cut.
  5. Push the left over bits back together handling as little as possible and cut again.
  6. Put them onto a tray and brush with a little milk. (This isn't absolutely necessary but it will make the tops a little golden).
  7. Bake for approximately 12-15 minutes.
To make the jam
  1. Put the strawberries, water and maple syrup into a bowl and microwave on high for 2 minutes or till soft and broken down. Stir in the chia seeds and press with a fork to break up the fruit.
  2. Once chilled the jam will thicken up.

Notes

Dip the cutter into flour so it doesn't stick.
Don't over knead. The dough will only just be mixed together.
Just push the leftovers together gently before cutting again
Add less water rather than more to keep the dough from being sticky.

    Thank you, I didn’t have any lemonade and wanted to make scones. I used gf flour as I’m a coeliac, and they turned out delicious! 🙂

    God, how I love a good scone! My mother in law used to make them with lemonade in a similar way. I like the idea of soda water as it cuts down on the sweetness.
