Easy one bowl apple cakes-for Princesses. These cute easy to make cupcakes make the perfect birthday cakes

Princess Cupcakes

I was making these little cakes for a 5 year old, and once they were cooled and packed away for the night I stopped by Skaters room to say good night. He was very uncharacteristically laying on his bed with a headache and, was very hot and flushed. God, I felt a sudden pang of fear, had I made him sick?

Baking takes a lot of time and I was so busy making cupcakes, that I’d fed him some left over chicken lurking in the fridge. There was no date on it, but was sure I had only made it a few days prior.

Thinking he may be getting a cold, I suggested he take a head ache tablet and go to sleep. It was about 1 am when I heard his footsteps running down the hall and the bathroom door slam. For the rest of the night I helped Skater where I could , but he was very very sick. I will tell you quietly that I was freaking out. I have never poisoned anyone, let alone my own child.

By the time the sun came up I had made a plan to take him to hospital and admit I had poisoned him. He was up and heading for the bathroom when I met him in the hall. He looked grey and weak and it made me feel teary. “Skater, how do you feel?”

” Not that good”, he said before I felt I had to tell him the truth………..

” I think I may have poisoned you”.

” Really, I thought I might have just got this from Hayley. When I was over there on Saturday the whole family was sick with gastro and I was holding the babies hand because he had just been to the hospital, poor little fella”

“Oh really?” I said that with  a steady firmness I didn’t feel.  I felt relieved , I felt I trusted myself again and I felt exhausted  because I had stayed awake all night, obsessing about making him sick and worrying what to do about it. I took him to the medical centre and got him some gastro stop and had the doctor take a look at him. He spent the next three days in bed, missing uni and getting better before the next problem arose…..

Meantime I decorated these cup cakes , that are a little wonky because of lack of sleep. They are lovely and moist and quite easy, in a one bowl kind of way.  I have made this recipe before but, it makes a great cupcake.

Easy One bowl apple cakes

These are a one bowl cake. They have secret hidden fruit that makes them moist and allows them to keep well.

Ingredients
  

  • 300 gm caster sugar 1 1/2 cups
  • 300 gm apple sauce unsweetened (1 1/2 cups)
  • 150 ml oil 2/3 cup
  • 2 whole eggs 70 gm
  • 1 TSP vanilla
  • 1 teaspoon cinnamon
  • 300 gm plain flour 2 cups
  • 1 1/2 teaspoons baking soda bi carb

To decorate

  • 200 gm Royal Icing 1 packet
  • 1 tsp food coloring optional
  • 200 gm Colourful bits to decorate

Instructions
 

  • Set the oven to 170 C/ 340 F. You will need 12-14 muffin cups. I use large muffin-sized ones
  • Mix the oil, eggs, vanilla and apple puree together till well combined
  • Add the sifted flour, salt, baking soda and cinnamon.
  • Fill the papers almost to the top as the mixture doesn't rise very much.
  • Bake for 20 minutes or till firm when touched in the middle.
  • Cool completely and decorate how ever you like.

Icing

  • Follow the packet directions for the royal icing. This can be bought in supermarkets. Leave out a little of the liquid for the recipe and add some pink food colouring in is place if you are colouring it. Gel food colouring is the best but if you cant get a hold of that use liquid.
  • Spread the frosting over the cupcakes and decorate with pink silver and white pieces.

    Oh you poor thing. A mothers guilt!
    Gastro virus’ are terrible aren’t they. Especially when they go through a whole family.

    Now these cupcakes look lovely and I bet that little girl was squealy happy when she saw them. I make a similar cupcake/cake that uses pureed pear…moist! (As really, is there anything worse than a dry old cupcake?)

    You are one creative lady, that is something I just don’t have the patience for -decorating cakes or in your case cupcakes, they look fab. Gastro or food poisoning is not fun and I think you can keep trusting your nose.

    As awful as I feel for Skater, and really I do, I had really bad food poisoning from sushi last year and haven’t been brave enough to eat it again, and I can practically live on the stuff…. I’m still in stitches from your “I think I may have poisoned you” line 😛 bahaha

    Your poor Skater…he must have felt awful. And poor you, thinking you had poisoned him. The little princess who received the cupcakes must have loved them…so pretty with their pink decorations.

    i usually eat leftovers a whole WEEK after I make them and I’ve yet to be food poisoned! so my guess is he just caught it from the other family. But how stressful for you!

    These cupcakes look wonderful, though! Totally elegant and the perfect thing to stress eat when you’re worried you’ve food poisoned your son. 😛

    Poor Skater 🙁 I hate that he was unwell, regardless the cause. It was the gastro bug I’m sure.
