I love making desserts. Some people don’t.
It can be an after thought, and just sometimes you probably buy something at the last minute when people are coming over. You don’t have to. You can always be prepared. This apple, passionfruit and rye crumble is the kind of dessert you can have lurking in the cupboard ready…well almost. It will only take you a couple of minutes to whip it up and you’ll have your own house baked warm dessert ready to go.
How ?
When you make up this crumble mixture, make double. Crumble keeps for months in the freezer and can be pulled out and crumbled onto any fruit you have you don’t even need to defrost. Add roasted nuts or seeds, exchange the rye flour for plain flour or nut flour or add spices. It can be as simple or as fancy as you like. I used Kialla organic rye flour because I had it and because I love the nutty flavour
Fruit?
Keep a tin of pie apples in your pantry. You know the type, the apple is cooked and sliced and when you need fruit in an emergency for a pie or crumble, there it is. For crumble it can be mixed with fresh or frozen berries, seasonal soft fruits like apricots or peaches and cherries or passionfruit.
Remember
When you substitute ingredients remember a crumble is like a giant shortbread broken up. The richer the mixture: sugar and butter, the more luscious the crumble. The less butter and sugar the drier it will be. I am an old school crumble maker- butter and sugar are very important – just dont eat too much
Some flours will produce a different texture. Coconut flour will absorb moisture and not stay as crunchy when cooked and the same goes for coconut oil. If using these be aware. Sugar holds ingredients together and caramelizes in baking. If using a substitute use enough to bind the dry ingredients and make a biscuit like crumble.
I love cream or ice cream to serve with mine but I had neither and so used yoghurt. Plain greek yoghurt sweetened with a little powdered sugar (or not) is nice. I only had a couple of passionfruit to add to my tinned apples for my surprise visitors and it was a very nice combination. Crumble with Rye flour isn’t too sweet and the passionfruit worked beautifully well with both the apples and rye.
Dont forget to put any leftover crumble mix in a container and freeze.
Apple Passionfruit and Rye Crumble
Ingredients
- 400 gram apple sliced tinned (pie apple)
- 80 ml passionfruit (2 small approx 1/4 cup
- 20 gram caster sugar/ granulated 1 Tablespoon
Crumble mixture
- 100 gram brown sugar
- 150 gram butter
- 200 gram Rye Flour
- 150 ml Yoghurt or cream to serve
- 1 whole passionfruit to serve
Instructions
- Oven 350F /180C ( 6 in ceramic dish)
- Pour the apples , and 1 Tablespoon of sugar into the bowl or container you are going to bake it in. Scrape the passionfruit from it's shell into this dish with the apple and stir gently to combine
- Mix the butter and sugar in a stand mixer to combine well then add the rye flour until it is just mixed. ( or rub ingredients together till sandy)
- Push the crumble mix together so that it develops nice clumps and sticks together in lumps.
- Sprinkle the crumble over the fruit
- bake for 20-25 minutes or until brown and biscuity .

Crumble is so good at this time of year. I love to make apple crumble and have added different types of fruit but never passionfruit. Must do that! That’s an excellent tip to make extra crumble and put it in the freezer xx
