Apple Cake with Macadamias, stir together goodness. I’ve decided that I love cake. I didn’t used to love cake but now I do.
It feels wrong to say that because there are so many people that are anti-sugar and anti -carbs and some poor people that can’t eat gluten, I know …..but that doesn’t mean I can’t eat cake does it?. Does anyone else out there still eat cake?
I don’t have a particular time of day that I think cake should be eaten, perhaps this is the one point that some people may not agree on, the earlier the better for me. Cake fuel for the day. There is no reason why cake cannot be eaten for breakfast, in fact if it’s the type of cake that I’m talking about ” Stir together Apple and Macadamia Cake” then it is probably better than most breakfast cereals anyway. How many cereals contain 2 or 3 apples and a cup of nuts? I would not be upset if Skater ate this for breakfast because it most certainly has less sugar than the cereal he eats!
When I first started making this cake ( so many years ago I am embarrassed to say), I thought it was the ideal throw together dessert, and I still do. Serve it like this…..a breakfast cake or serve it hot out of the oven at tea time. Do you have any idea how good this cake is served warm with salted caramel sauce?. Throw it on a cake plate with an extra handful of Macadamias and some ice cream and let every body dive in and serve themselves. They will thank you…… hey it takes all of 10 minutes to cut and mix together and 40 minutes to bake.

Apple Cake with Macadamias, stir together goodness
Ingredients
- 125 gram butter melted
- 280 gm apples diced approximately 3, 2 cups
- 180 gram brown sugar tightly packed
- 225 gram plain flour 1 1/2 cups
- 1 teaspoon bicarbonate of soda
- 3/4 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon of ground ginger nutmeg or cardamom
- 1 whole Egg
- 150 gram macadamias 1or other nuts
- 60 ml milk approximately 1/4 cup
Garnish / optional
- 1 tablespoon butter melted for brushing
- 1 whole apple small sliced
- 20 gm nuts Extra chopped
Instructions
- Set the oven to 180 C /350 F. Line and grease a 20 cm cake tin
- Melt the butter first. Set aside
- Put the chopped apples into a mixing bowl, big enough to fit all of the ingredients. Add the flour baking powder and soda, sugar and spices as well as the nuts and mix up well .
- Break the egg into a cup and beat to break up. Pour into the bowl with the apple and flour mixture add the melted butter and the milk mix well with a spatula or spoon. Add a little more milk ( up to 2 Tablespoons ) if it seems very hard to mix. Mix quite well to make sure it is all incorporated.
- Spoon into the prepared cake tin and flatten with a spoon. Garnish with sliced apples painted with a little butter sprinkle with the extra nuts and a little raw sugar if you like. ( I do!).
- Bake for 35 to 40 minutes . Test the middle of the cake with a skewer. It should come out clean.

Can be either. I do always like to roast nuts before using though for extra crunch

I’ve just put this cake in the oven, but I can’t find if it says or where it says how long to bake it for. This may be a stupid question, but am I to assume it should take 50 minutes, as per the “10 minutes, 40 minutes, 50 minutes” up the top?

I LOVE cake! I hardly ever eat it for breakfast or afternoon tea though, for me it’s almost always an indulgent dessert cake. This looks wonderful though and could probably manage a slice at any time of day 🙂

So refreshing to see a cake with butter, sugar and eggs. I love making and eating cakes. I am tired of the raw food movement and replacing traditional ingredients with complicated and hard to get ingredients. Lets just eat less cake but make it with real ingredients and enjoy it. Your recipe looks great. It’s going on my list of cakes to make. I hope I haven’t offended anyone.

DEFINITELY a lover of cake although alas as you know I am one of those whose experiences are somewhat limited by gluten. I could easily have cake for breakfast. But then again, I eat chocolate for breakfast when I can!
