Banana Peanut Butter Cookies
These cookies are so simple even a child could make them. They have 4 ingredients and a stir together method and are gluten free to boot! Australian cup measurements

Serves: 24
Oven 180 C/ 2 lined trays
  • 110 gm / ¾ cup / 3.40 oz caster sugar
  • 375 gm / 13.20 oz / 1½ cups crunchy peanut butter
  • 1 egg (70 gm/ large)
  • 80 gm / 2.80 oz or 1 small banana
  1. Put the sugar in a medium sized bowl.
  2. Add the banana and squash it into the sugar till there are no lumps
  3. Add the peanut butter and egg and mix till combined
  4. Using two dessert spoons put even sized blobs onto two trays ( about a heaped ½ desserts spoon) The mixture will make 24 even sized cookies.
  5. To shape the cookies you will need to get a fork and a cup of water. Dip the fork into the cup to stop the mixture sticking. Press onto each cookie flattening a little and shaping dipping the fork each time.
  6. You'll get the hang f it in no time.
  7. Bake for 18 minutes / 15 for fan forced or till lightly golden at 180C / 350 F Put the tray on a rack and leave till the cookies have completely cooled. these cookies are very soft and bendy when warm.
