Chicken Soup easy Prawn Wontons and masterstock

Chicken wonton soup

  I have found a soup that Skater likes. Yes it’s a wonton soup with vegetables . ( Maybe he doesn’t know it’s soup).  He left the Shiitake Mushrooms and the shallots but there was a generally good reception. Would you like to give this one a go?

I made the long version of this by making a Masterstock and cooking a whole chicken in it but you could flavour a pre- made stock and buy a cooked chicken . This is to cut the preparation time….and that’s up to you. You should know however that the whole chicken cooked in Masterstock is very delicious and you will have some left over for snacks/lunches/dinner tomorrow.

Chicken Soup Easy Prawn Wontons

 1.Masterstock Base ( optional)

  • 2.5 litres of water
  • 1 cup of Shoaxshing wine
  • 125ml light soy
  • 75ml dark soy
  • 100gm yellow rock sugar (or 50gm caster sugar)
  • 2 pces dried citrus peel (or Zest of 1/4 orange)
  • 2 pices of cassia bark
  • 4 star anise
  • 1 piece of ginger ( 3 cm)
  • 4 cloves of garlic
  • 1.3kg chicken ( washed dried)
  • 2 cleaned coriander roots
  • To make Masterstock and cook the chicken. Put the ingredients into a large pot and simmer for 30 minutes. Lower the chicken into the liquid and simmer on low for 30minutes. Turn off cover and sit for 10 minutes before testing to see if the chicken is cooked. Remove from the stock and cool before slicing the breasts for the soup

2.Prawn Wontons

  • 1 packet wonton wrappers
  • 250gm green prawn meat ( can be thawed frozen)
  • 1 teaspoon curry paste ( red or green)
  • 2 teaspoons fish sauce
  • zest of 1 lime
  • 1 teaspoon caser sugar
  • 1 clove of garlic
  • 1 x 20cent size piece of ginger
  • 1 cleaned coriander root
  • 1/2 a small egg( break into a bowl beat and use 1/2)
  • Put all of the ingredients for the prawn filling into the food processor. Leaving the wonton pastry and the extra 1/2 egg ( eggwash) aside. Chill. To make the Wontons .Put a 1/2 tsp prawn mixture onto a wrapper, and fold in half widthways. Fold again,, then dab the corners with eggwash ( or water) and fold into a nurses hat. ( similar to a tortellini). Put onto a tray and cover. Makes approx 36

Put together

  1. Strain the Masterstock liquid. You will need about 1.5 litres approx ( 4-6 people).
  2. Put this in a pot with 4 cups of extra stock or water. Bring to a simmer
  3. . use the seasoning ingrediets to make it taste how you would like it. Using a pinch of salt to start 2 tablespoons of light soy . Taste. When you are happy with the taste add the wontons and shitakes. Simmer till they turn opac and start to rise to the top (approx 5 min). Add the other ingredients ( crunchy bits) and finish with some sesame oil. Serve

Ingredients for Soup  (Crunchy bits)

  • 1 piece of julienne ginger
  • 2 cups sliced snow peas
  • 1 punnet sliced shitake mushrooms
  • 1 bunch of picked coriander
  • 2 cups sliced chicken meat
  • 1 cup sliced green onion
  • Sliced red pepper, beansprouts or bok choy

Seasoninng ( to finish the soup)

  • Light soy
  • Sesame oil
  • Salt
  • Chilli (sliced)

*** The short version of the soup and wontons for the time poor!

Put 2 litres of chicken stock into a pot with the dark and light soy, ginger, garlic, cassia and star anise and simmer for 15 minutes and strain. season then drop rounded lumps of prawn meat into simmering soup liquid.  Finish sliced chicken and crunchy vegetables
