Open only 3 weeks, PS Cafe is on Wardell Rd opposite the Dulwich Hill Railway station. (inner West of Sydney). Heaven knows the people around these parts deserve a decent cafe.
Fresh and new and waiting for regulars , it is querky and fun. I more than suspect that the owners two brothers Philip Lakis (chef) and Simon Lakis ( Manager/front of house), have quite good senses of humour. The thing they are not poking fun at is serious food. Every thing is made in the kitchen from the jams and sauces to the cakes and slices, sausages and house cured Wagyu . There is coffee by Deluca Speciality Coffee, with 10 hour cold drip coffee over ice available for those in the know. These Greek siblings plan to take Dulwich Hill by storm!

I was greeted with a friendly smile and the offer of a table. I asked some questions and showed interest in the food and Phillip was out to chat in no time. He makes very interesting sausages that he serves as chipolatas for breakfast in all kids of flavours , today, Pork and Fennel. We discussed the merits of making properly slow oven roasted tomatoes, and I look forward to trying these, soon. I learnt they have recently been travelling, looking at the world and what they can bring back to their own small slice of the globe. I am glad they did because the idea for their house cured Rare Roasted Wagyu Beef Salad was delicious. It arrived warm and full of lightly garlicy roasted mushrooms, Spanish onion, spinach and good quality grana ( parmesan). After eating this dish, I have worked out that…… the chef cares. The Spanish onion was lightly marinated ( not raw) . The mushrooms were beautifully roasted without being over garkicy or smothered in butter ( grainy on the mouth and very rich cooked this way.) The salad arrived warm and tossed through fresh spinach leaves lightly dressed and accompanied by finely shaved parmesan.
